Bechamel is a classic white sauce that has many uses. It’s found in croque monsieur, lasagna, mac and cheese, it’s great over biscuits and delicious over cauliflower! A must to have in your recipe file.
• 5 Tbs Butter
• 4 Tbs flour
• 4 cups milk
• 1 large bay leaf, optional
• 2 tsp salt
• 1/2 tsp freshly grated nutmeg
In a medium saucepan over low heat, melt butter, add flour and stir until smooth. Over medium heat, cook mixture until it turns a light golden color about 6-7 minutes.
Meanwhile, heat the milk in another saucepan and bring to a boil, add the hot milk to the butter 1 cup at a time, whisking continuously until very smooth.
Add the bay leaf and bring to a boil and cook 10 minutes. Remove from heat and season with salt and nutmeg. Discard the bay leaf.
