A perfect summer salad using fresh corn and tomatoes! Healthy and truly delicious, perfect with grilled meats!
• 1/3 cup of canola oil
• 1/2 cup of red wine vinegar
• 2 tsp of sugar
• 1 tsp of paprika
• 2 tsp of cumin
• 1 tsp of salt
• 1/4 tsp freshly ground black pepper
• 4 ears of corn
• 1/2 cup of water
• 1 tsp of kosher salt
• 1/4 tsp of pepper
• 1/2 tsp of sugar
• 1 can of black beans, drained and rinsed
• 1 medium tomato, chopped
• 4 green onions, white and green parts, chopped
• 1 Tbs of fresh cilantro, chopped
Start by cutting the kernels off of 4 ears of corn. Place the corn in a heavy skillet with 1/2 cup of water, 1 tsp of salt, 1/4 tsp pepper and 1/2 tsp of sugar.Bring to a boil, then simmer for about 15-20 minutes until the corn is tender and the water is absorbed.
Meanwhile make the dressing: In a large bowl, whisk together the oil, red wine vinegar, sugar, paprika, cumin, salt and pepper.Now add in the beans, corn, chopped tomatoes, green onions and cilantro.Mix well, chill for at least an hour. This salad just gets better and better!
