Peach & Blackberry Crisp

This dessert is simply luscious! Fresh ripe peaches and plump juicy blackberries, spiced just right, and topped with a crispy, streusel, pecan topping! Serve warm with vanilla ice cream and you'll be in heaven!
Ingredients
Topping
  • 1½ cup of all purpose flour
  • ¾ cup of brown sugar
  • ½ tsp of cinnamon
  • dash of salt
  • ¾ cup of chopped pecans
  • ½ cup of melted butter
Filling
  • 5 large peaches, peeled, pitted and sliced
  • ½ cup of sugar
  • 3 heaping Tbs of flour
  • ½ tsp of cinnamon
  • ½ tsp of cloves
  • ¼ tsp of nutmeg
  • 2 cups of fresh blackberries
To finish
  • 1½ Tbs of turbinado sugar (sugar in the raw)
  • vanilla ice cream or yogurt
Instructions
  1. Start with the topping: mix together the flour, brown sugar, cinnamon, salt, pecans and melted butter in a medium bowl, stir to combine and set aside.
  2. Then in a large skillet, combine the peaches with the sugar, flour, cinnamon, cloves and nutmeg. Heat over medium/high heat until it just starts to boil, then reduce heat and simmer for 3 minutes or until the peaches just start to soften. Remove from the heat and stir in the blackberries.
  3. Pour the peach mixture into a buttered, 9" diameter, glass baking dish and sprinkle on the topping.
  4. Bake for 30 minutes. If you like, you can always switch on the broiler at the end for more color. Sprinkle on the turbinado sugar while hot out of the oven. Let cool and serve with vanilla ice cream! YUM
