Teriyaki Chicken Noodle Bowl

This noodle bowl is so incredibly healthy, nutritious and easy to make, but most of all it is superbly delicious! Bite-sized chicken pieces are marinated in a homemade teriyaki sauce, stir-fried with fresh veggies and served over wheat noodles with more teriyaki. Make this your own and use any veggies you like, you can also use brown rice, whatever you do, you'll love this recipe!
Ingredients
Marinade and Sauce
  • ½ cup of soy sauce
  • 3 Tbs of brown sugar
  • 2 Tbs of honey
  • 2 scant tsps of sesame oil
  • 1 large clove of garlic, grated
  • 1 tsp of fresh ginger, grated
  • ⅓ cup of water mixed with 2 tsp of cornstarch
Chicken, Veggies and Noodles
  • 2 lbs of boneless, skinless chicken breast, cut into bite sized pieces
  • 2 tsp of vegetable or canola oil
  • 4 - 5 oz of yakisoba noodles, cooked (or 3 - 4 cups of cooked brown rice)
  • 1 large carrot, cut into matchsticks
  • 1 cup of fresh sugar snap peas
  • 1 small red bell pepper, cut into thin strips
  • chopped green onions for garnish
Instructions
  1. Mix all of the marinade ingredients together in a small saucpan (except for the water/cornstarch mix). Cook over medium heat until the sugar dissolves, then stir in the water/cornstarch mixture and cook until thickened, 2 -3 minutes. Let cool.
  2. Place the chicken in a shallow bowl and pour in just enough of the marinade to coat the chicken, reserve the remaining sauce for later. Let the chicken marinate for 30 minutes.
  3. Shake off the excess marinade and heat the oil in a large heavy skillet or a wok, over medium/ high heat, add in the chicken and cook undisturbed for 2 minutes, turn and cook 2 more minutes, then remove from the skillet.
  4. Add in the carrots, bell pepper and snap peas, cook and stir for for 3 - 4 minutes.
  5. Now just add the chicken back in and pour in the reserved marinade. Stir well and cook for a few minutes.
  6. To serve, place some of the cooked noodles or brown rice in a bowl, spoon on the chicken & veggies and sprinkle on the chopped green onions. Enjoy!
Notes
Yakisoba noodles are wheat noodles, often used in stir frys. They are found fresh in the produce department of grocery stores. They are refrigerated and are usually with other Asian item. Brown rice is a great option also. The sauce is so incredible, sometimes I double the recipe and serve a little on the side and then save the rest to drizzle over veggies throughout the week.
