Medallions of Pork with Blackberry Sauce

Here is a very simple, but insanely scrumptious recipe for pork tenderloin. Medallions of pork are seared in a skillet, finished in the oven and topped with a luscious fresh blackberry sauce! The pork is melt in your mouth tender and the sauce is sweet and savory and out of this world!
Ingredients
  • 2 lbs of pork tenderloin
  • 1 Tbs of olive oil
  • 1 Tbs of butter
  • 1 tsp of salt
  • 1 tsp of freshly cracked black pepper
  • ½ tsp of garlic powder
  • ½ tsp of onion powder
Blackberry Sauce
  • 1 tsp of olive oil
  • 1 shallot, minced
  • 2 garlic cloves, smashed and minced
  • 2 cups of red wine or 1 cup red & 1 cup blackberry wine
  • 2-3 fresh thyme sprigs
  • 1 cup ( 8oz) of fresh blackberries
  • 2 heaping Tbs of blackberry jam
  • 2 tsp of Worcestershsire sauce
  • 1 tsp of salt
  • 1 tsp of flour
Instructions
  1. Start by making the amazing blackberry sauce, heat 1 tsp of olive oil in a medium-sized saucepan, add in the shallot, cook and stir for 2 minutes, add in the garlic, cook for 1 minute. Add in the wine and thyme sprigs, bring to a boil, then reduce the heat to a simmer and cook for 20 - 30 minutes or until reduced by half.
  2. Remove the thyme sprigs and add in the blackberries, blackberry jam, Worcestershire sauce, and salt, smash the whole berries with a fork or a potato masher, stir well then slowly sprinkle in 1 tsp of flour, stir until slightly thickened.
  3. Preheat the oven to 350 degrees. For the pork, trim the thin ends of the tenderloins and cut them into even, 1 inch thick, medallions, sprinkle on the salt & pepper and the garlic and onion powder.
  4. Then, heat the olive oil and butter in a large heavy skillet, cast iron if you have one. Then add in the pork, you may have to work in 2 batches. Cook for 2 - 3 minutes on each side, remove from the skillet and cook the remaining pork. Either return all pork to the skillet or if it doesn't fit, place it in a baking pan. Finish in the oven for 5 - 6 minutes for until internal temperature is 145 degrees, important not to overcook.
  5. To serve, plate the tenderloins and spoon over the blackberry sauce, serve remaining sauce on the side, enjoy!
