Bananas Foster Cheesecake

This luscious cheesecake is spiked with rum and topped with the same amazing ingredients in the iconic dessert, "Bananas Foster", bananas, butter, brown sugar, rum, cinnamon and pecans! A real show stopper!
Ingredients
Crust:
  • 18 whole graham crackers
  • 1 stick of butter, melted
  • ¼ cup of sugar
  • 1 teaspoon of rum extract
Filling:
  • 3 (8 oz.) packages of cream cheese, softened
  • 1 cup of sugar
  • 1 tablespoon of rum
  • 1 teaspoon of vanilla extract
  • 3 eggs, room temperature
Topping:
  • ½ cup of light brown sugar
  • ½ stick of butter
  • 2 ripe bananas, sliced
  • 1 teaspoon of cinnamon
  • ¼ cup of rum
  • ½ cup of chopped pecans
Instructions
  1. Preheat the oven to 350 degrees. Place the graham crackers in a food processor, and mix until you have fine crumbs, then pour them into a large bowl and stir in the melted butter, sugar and rum extract.
  2. Spread and press in the bottom and halfway up the sides of a buttered, 9 or 10-inch buttered, springform pan, then bake for 10 minutes. Remove from the oven and let cool.
  3. Now, blend the cream cheese on low speed with an electric mixer, scraping down the sides. Add in the sugar slowly, and continue to beat until creamy. Add the rum and vanilla extract, and mix until blended Add the eggs one at a time and continue to mix on low speed until well combined.
  4. Pour the mixture into the crust and spread evenly to the edges. Place a pan of hot water on the lower rack of the oven. Place the cheesecake on the rack above it and bake for 45 to 50 minutes or until the sides are set and the middle is a little jiggly. Turn the oven off, crack the door and let it cool down in the oven, then cool completely at room temperature, cover and refrigerator overnight. Loosen the sides with a knife and release the sides of the pan, I leave it on the bottom, too scary to remove it!
  5. To make the topping, combine the brown sugar and butter in a large saucepan, over low heat, then slice and add the bananas, cinnamon, rum and pecans, heat and stir for 5 minutes.
  6. Remove from the heat and let cool slightly. Now, just spread the topping on the cheesecake, slice and serve! Enjoy!
Notes
You can bake this in either a 9 or 10" springform pan. A 9" pan will produce a slightly higher cake and require maybe 2 -3 more minutes of baking time. Keep a close eye on the cake, it should be set everywhere but the very middle, where it will appear just slightly jiggly.
