Banana Rum Cake

Bananas, rum and pecans in one moist, luscious cake! Very easy to make, it all starts with a cake mix, it has an incredible rum glaze that soaks into the cake so it's a little boozy and completely delicious! You'll make this one over and over!
Ingredients
Cake
  • 1 French vanilla cake mix
  • 1 3.4-oz box of vanilla pudding
  • 4 eggs, room temperature
  • ½ cup of water
  • ¼ cup of vegetable oil
  • 2 Tbs of rum
  • 2 very ripe bananas, cut into chunks
  • ½ cup of chopped pecans
Glaze
  • ½ cup of butter
  • ¼ cup of water
  • 1 cup of granulated sugar
  • ½ cup of rum
Instructions
  1. To start, butter a 12 cup bundt pan and preheat the oven to 350 degrees. Add all cake ingredients (except nuts) to a standing mixer and beat until well incorporated. Stir in the nuts by hand.
  2. Pour the batter into the prepared pan.
  3. Bake for 45 minutes or until a toothpick or skewer inserted comes out clean. While the cake is baking, make the glaze, just add all glaze ingredients to a small saucepan and heat until the butter is melted and the sugar is dissolved.
  4. Let the cake cool for 10 minutes. Invert onto a plate and poke lots of holes in the cake using a skewer.
  5. Slowly pour the glaze over the cake, it seems like a lot of liquid, but it will all be absorbed. Some of the glaze will acccumulated in the middle, let it sit and absorb and then just spoon on any sauce that may remain. That's it, sprinkle on powdered sugar if you like. This cake keeps for days!
