Salmon Florentine

This is one spectacular salmon dish! A whole salmon fillet is baked to perfection, then it's finished with a topping of spinach, mushrooms, garlic, shallots, white wine and half & half! It comes together quickly and you'll adore it! Salmon is so good for us and I'm sure this recipe will be a favorite!
Ingredients
  • 4 tsp of olive oil, divided use
  • 1 salmon fillet, skin on, about 1 - ¼ lbs
  • salt and pepper for salmon
  • 2 shallots, minced
  • 6 oz baby Bella mushrooms, sliced
  • 3 large garlic cloves, minced
  • 5 oz fresh spinach, chopped
  • 1 Tbs of flour
  • ⅓ cup of white wine
  • ¾ cup of half & half
  • ½ tsp of kosher salt
  • ¼ tsp of pepper
  • dash of cayenne, optional
  • 1 tsp of dill
Instructions
  1. Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
  2. Drizzle 2 tsp of olive oil on the parchment and place the salmon skin down on the parchment and season with a little salt and pepper.
  3. Bake for 13 - 18 minutes, depending on the size and thickness of your salmon.
  4. While salmon is cooking, heat up a large heavy skillet or pan over medium/high heat. Add 2 tsp of oil, then saute the shallots for about 2 - 3 minutes, add in the mushrooms, saute for 4 - 5 minutes, then add in the garlic and spinach, cook until spinach is wilted. Add the flour, stir and cook 1 minute, then pour in the white wine, stir and cook for a few minutes, until well combined. Now add in the half & half, salt, pepper, dill and cayenne pepper if using, stir and simmer for 3 - 4 minutes.
  5. To serve, just plate the salmon and spoon over the spinach mixture, cut into serving portions at the table. Bon Appetit!
