Iron Skillet Whole Wheat Bread

Simple, rustic, delicious, homemade wheat bread! It just doesn't get any better or any easier than this! No need to knead, just stir together the ingredients, let rise and bake! It has a perfect texture, an earthy wheat flavor and it's lightly sweetened with honey, then sprinkled with oats and sea salt, this is really a special treat that is super easy to make! Bake it in a 10 - 12 " cast iron skillet or a dutch oven.
Ingredients
  • 4 cups of whole wheat flour (or 2 cups white whole wheat and 2 cups whole wheat)
  • 1¼ tsp of kosher salt
  • 2¼ tsp of yeast
  • 1 Tbs of honey
  • 2 cups of warm water
  • olive oil
  • oats
  • sea salt
Instructions
  1. Start by adding the flour, salt and yeast to a large bowl and stir or whisk together.
  2. Now, stir the honey into the warm water and pour it into the flour mixture, stir until well combined.
  3. Cover the bowl with a piece of plastic wrap and a kitchen towel. Place the bowl in a draft-free area for one hour. It will almost double in size.
  4. Now, prepare your skillet or dutch oven, just drizzle in a little olive oil and rub it around with a paper towel.
  5. Sprinkle a little flour in the top of the dough, flour your hands and pulll the dough away from the sides and out of the bowl, then just turn it out into the greased skillet and shape it into a round.
  6. Cover the dough with a kitchen towel and let it rise for 30 minutes in the same draft free place.
  7. While it's rising, preheat the oven to 400 degrees.
  8. Brush the top of the dough with a little olive oil, score it with a sharp knife and sprinkle on the rolled oats and sea salt.
  9. Bake for 35 to 40 minutes until it's a beautiful golden brown.
  10. To serve, cut or break into pieces, spread on some soft butter and enjoy!
