Mint Chocolate Chip Bundt Cake

This cake is so moist and rich and chocolaty! It's a vanilla cake with chocolate chips, Creme de Menthe and peppermint and is if that's not delicious enough, it's drizzled with a chocolate glaze! So easy to make, it starts with a cake mix! This will quickly become a favorite!
Ingredients
Cake
  • 1 vanilla cake mix
  • ¾ cup of water
  • ½ cup of Creme De Menthe
  • ⅓ cup of room temperature butter
  • ½ tsp of mint or peppermint extract
  • 2 eggs, room temperature
  • 1 - 12 oz package of semi-sweet or milk chocolate chips
Glaze
  • 2 cups of sifted powdered sugar
  • 2 Tbs of cocoa
  • 1 Tbs of soft butter
  • 1 tsp of vanilla extract
  • 2 - 4 Tbs of milk or cream
Instructions
  1. Heat the oven to 325 degrees, then butter and flour a 10 cup bundt pan.
  2. Using an electric mixer, beat all ingredients (except the chocolate chips) until well mixed, about 2 - 3 minutes. Remove the bowl from the mixer and stir in the chocolate chips, then just pour into the prepared bundt pan. Bake for 50 - 55 minutes, until a skewer comes out clean. Cool on a wire rack for 20 - 30 minutes, then invert onto a cake plate. While the cake is baking, prepare the glaze, In a medium bowl, combine the powdered sugar, cocoa and butter, stir in the vanilla, then add in the milk gradually, stir until the mixture is very smooth, you can also use an electric mixer, Now just drizzle the glaze all over the cake, adding as much or as little as you like, I like a lot!
  3. Cut a big slice and put the coffee on!
