It's true that simple is best! Oven roasting fresh veggies is the very best method there is for bringing out the natural sweetness and flavor, they're also helped along, with olive oil, minced garlic, and a fresh herb is always welcome. These healthy, tasty vegetables are perfect alone or as a side to any meat or fish. It just makes you feel good to dig into a huge plate of steaming, perfectly cooked veggies!
Ingredients
  • vegetables of your choice, I used red onion, yellow squash, green pepper, carrots, cauliflower, mushrooms, russet potato and sweet potato,
  • ⅓ cup of olive oil
  • 2 tsp of kosher salt
  • 1 tsp of black pepper
  • drizzle of white wine or balsamic vinegar
  • fresh herbs, thyme, chives, or dill - optional
Instructions
  1. This is simple and fun to put together, and colorful! First, preheat the oven to 425 degrees
  2. Cut all of your vegetables into chunks, taking care to cut them all the same size, so they will cook evenly, place all but the mushrooms on a half sheet pan.
  3. Drizzle with the olive oil, sprinkle on the vinegar, salt and pepper and any fresh herbs you are using. Toss with your hands to coat all evenly.
  4. Place in the oven on the lower rack and roast for 15 minutes, then add the mushrooms and stir everything around, roast another 15 minutes, then check to see if they are done to your liking, if not, continue to roast 5 minutes at a time until done.That's all! Soo good!
