If you're looking for a simple, delicious, elegant appetizer to make in minutes, here it is! Caprese bites! Little mozzarella balls, ripe, sweet cherry tomatoes and fresh basil leaves! Just pop onto skewers and drizzle on a little dressing just before serving. I like them with a balsamic reduction, but a simple vinaigrette, blue cheese or ranch would be delish also. These little guys are beautiful on a serving plate!
Ingredients
regular sized toothpicks
cherry tomatoes
basil leaves
mozzarella pearls or mozzarella, cut into small pieces
salad dressing
Instructions
This will be the easiest appetizer you've ever made! Just take a toothpick, skewer a tomato, then a basil leaf, (if they're too big, tear them into small pieces), then skewer a mozzarella ball, arrange on a serving plate and just before serving, drizzle with your choice of dressing, a simple vinaigrette works well, but I really like a balsamic reduction. To make, place ½ cup balsamic vinegar and 3 Tbs of sugar and a dash of salt in a small saucepan. Heat over medium-low heat and stir until the sugar is dissolved. Then reduce the heat and simmer for about 8 - 10 minutes or until the vinegar is reduced to 3 to 4 tablespoons. Let cool, then drizzle on your skewers, enjoy!
