Caprese Bites

If you're looking for a simple, delicious, elegant appetizer to make in minutes, here it is! Caprese bites! Little mozzarella balls, ripe, sweet cherry tomatoes and fresh basil leaves! Just pop onto skewers and drizzle on a little dressing just before serving. I like them with a balsamic reduction, but a simple vinaigrette, blue cheese or ranch would be delish also. These little guys are beautiful on a serving plate!
Ingredients
  • regular sized toothpicks
  • cherry tomatoes
  • basil leaves
  • mozzarella pearls or mozzarella, cut into small pieces
  • salad dressing
Instructions
  1. This will be the easiest appetizer you've ever made! Just take a toothpick, skewer a tomato, then a basil leaf, (if they're too big, tear them into small pieces), then skewer a mozzarella ball, arrange on a serving plate and just before serving, drizzle with your choice of dressing, a simple vinaigrette works well, but I really like a balsamic reduction. To make, place ½ cup balsamic vinegar and 3 Tbs of sugar and a dash of salt in a small saucepan. Heat over medium-low heat and stir until the sugar is dissolved. Then reduce the heat and simmer for about 8 - 10 minutes or until the vinegar is reduced to 3 to 4 tablespoons. Let cool, then drizzle on your skewers, enjoy!
