Baked Catfish Fillets

I love catfish and I'm always looking for new catfish recipes. This is one of the very best I've made! The fillets are slathered with mayo, Dijon, fresh garlic, paprika, and salt & pepper, then coated in Panko and baked! The flavor is incredible and the fish are perfectly cooked with a crisp coating, so much healthier than frying and no mess!
Ingredients
  • 4 catfish fillets
  • 3 heaping Tbs of mayonnaise
  • 2 heaping tsp of Dijon mustard
  • 3 garlic cloves, minced
  • ¼ tsp of paprika
  • ½ tsp of salt
  • 1 heaping cup of plain panko breadcrumbs
  • 1 tsp of salt
  • ½ tsp of black pepper
Instructions
  1. First, in a small bowl, stir together the mayo, mustard, garlic, paprika, salt, and pepper. Place the fillets in a shallow dish or pan. Now, spread the mayo mixture evenly on one side of the fillets, turn them over gently and do the other side. Cover and refrigerate for 30 minutes.
  2. Remove from the fridge and place them on a baking sheet. Preheat the oven to 425 degrees,
  3. Stir together the panko, and the salt & pepper, then coat both sides of the fish with the mixture, pressing it in with your fingers.
  4. Bake for 18 minutes, then turn off the oven and switch on the broiler, broil for 1 - 2 minutes for more color, this is an optional step. All done, serve with tartar sauce if you like, they are delish!
