Peach, Chipotle Grilled Chicken

Just think about perfectly grilled, juicy, tender, chicken with a luscious peach, chipotle sauce glazed on during grilling! The sauce is the star! Sweet peach preserves, salty soy sauce, Dijon, fresh garlic and smokey chipotle peppers! I used skin on, bone-in chicken breasts for this recipe, but any cut of chicken works, you could even butterfly skinless, boneless breasts for quick cooking. I know you'll adore this sauce!
Ingredients
  • 6 chicken breasts
  • 1 jar of peach preserves
  • 2 Tbs of canola oil
  • 2 Tbs of soy sauce
  • 2 tsp of dijon mustard
  • 3 garlic cloves, minced
  • 3 chipotle peppers in adobo sauce, chopped
  • 1 tsp of kosher salt
  • ½ tsp of black pepper
Instructions
  1. In a medium bowl, add the peach preserves, oil, soy sauce, Dijon, garlic, peppers and salt & pepper, stir until well combined.
  2. Prepare the grill, brush a little oil on the chicken breasts and grill for 5 - 6 minutes on each side with the lid on, then start glazing and cook another 5 - 6 minutes on each side, depending on the thickness of your breasts. All done, if you have any sauce left, brush it on before serving, enjoy!
