One of the simple and luscious pleasures in life, Peach Cobbler! Fresh, ripe peaches tossed with sugar and a hint of cinnamon, topped with a batter crust and baked until hot and bubbly, serve warm with vanilla ice cream, this is the very best cobbler recipe I've tried! I insist you use fresh peaches!
Ingredients
  • ½ cup of butter
Batter
  • 1 cup of flour
  • 1 cup of white sugar
  • 1 Tbs of baking powder
  • ¼ tsp of cinnamon
  • 1 cup of whole milk
Peaches
  • 10 peaches, pitted, peeled and sliced
  • ¾ cup of white sugar
  • ¼ cup of brown sugar
  • 2 tsp of cornstarch
  • 2 tsp of fresh lemon juice
  • ¼ tsp of cinnamon
  • turbinado sugar - optional
Instructions
  1. Preheat the oven to 375 degrees, place the butter in a 9 X 13 baking pan, pop in the oven to melt, remove from the oven. Mix up the batter in a large bowl, stir together the flour, sugar, baking powder and cinnamon, then stir in the milk, pour this mixture over the butter, but don't stir.
  2. Place the peaches, sugars, lemon juice, cornstarch, and cinnamon in a large saucepan or skillet over medium/high heat and bring to a boil, stirring to combine. Spoon this over the batter evenly and again, don't stir.
  3. Now, just bake for 45 minutes. Beautiful! This is an extra step, I like to sprinkle on turbinado sugar when the cobbler comes out of the oven, adds a nice crunch and a little more sweetness, delish with whipped cream or vanilla ice cream!
