Lemon Garlic Baked Chicken

Nothing is as iconic, beautiful and comforting as a whole baked chicken! Simple and rustic with 6 ingredients! As the chicken bakes, the natural juices of the bird mingle with the lemon, garlic, and butter to make a heavenly sauce! What on earth smells more divine than a roasting chicken!
Ingredients
  • 1 (3 -1/2 to 4 lb ) whole chicken
  • kosher salt
  • freshly ground black pepper
  • 8 whole peeled garlic cloves
  • 1 large lemon, sliced
  • ½ stick of melted butter
Instructions
  1. Start by patting the chicken very dry with paper towels and sprinkle the bird all over with kosher salt and pepper, be generous. Also, preheat the oven to 425 degrees
  2. Now place him in a large roasting pan or dutch oven along with the lemon slices and garlic cloves.
  3. Pour the melted butter over the chicken, yum!
  4. Bake for 1 hour and check for doneness. To check, carefully remove from the oven and poke a knife into leg joints, and pierce the meat. If juices run clear, the chicken is done. If you see any pink color, it needs more time. Continue to roast, checking every 5 minutes, until juices run clear. Let it rest for 15 - 20 minutes before cutting and serving, pour a little of the juices over the top of the chicken and serve the remaining sauce on the side.
Notes
Cut potatoes into chunks and place in the roasting pan with the chicken, YUM!
