Salmon with Creamy Sun-Dried Tomato Sauce

I love salmon in any way, shape or form! This recipe is very elegant and has an incredible, delicate sauce with complex flavor! Sear your salmon so the skin is crispy and the top is golden, then make this easy sauce with garlic, onion, sundried tomatoes, Italian spices, smoky paprika, and fresh parmesan cheese, all made creamy with half & half and a little chicken broth! Doesn't that sound amazing!
Ingredients
  • 1½ lbs of salmon fillets, skin on (4 filets)
  • salt and pepper for salmon
  • 1 Tbs of canola oil or olive oil
  • 4 large garlic cloves, minced
  • ⅓ cup of finely chopped Vidalia onion
  • 4 oz of sun-dried tomatoes in oil, drained and sliced (reserve 1 tablespoons of oil)
  • ¼ tsp of smoked paprika
  • ½ tsp of dried basil
  • ½ tsp of dried oregano
  • ¼ tsp of red pepper flakes
  • ½ cup of chicken broth
  • 1 cup of half & half
  • ⅓ cup freshly grated parmesan cheese
  • salt and freshly cracked black pepper, to taste
  • sliced green onions for garnish - optional
Instructions
  1. Lightly season salmon fillets with salt and pepper. In a large cast iron or non-stick skillet over medium/high heat, sear the salmon in 1 Tbs of oil, skin side down for 3 - 4 minutes, carefully turn them over with a spatula and cook for 3-4 minutes util golden. Then transfer the fillets to a plate and make the sauce.
  2. Wipe most of the browned bits and oil from the skillet and add a scant Tbs of oil reserved from the sun-dried tomatoes and saute the onion, garlic, sun-dried tomatoes, paprika, red chili pepper flakes, basil and oregano for 2 - 3 minutes.
  3. Add in the chicken broth to deglaze the skillet and bring to a gentle simmer. Add the half and half and parmesan to the skillet and stir until well combined.
  4. Taste and add salt and pepper if needed, then add the salmon back to the skillet, cook for a few minutes to heat through. Sprinkle with green onion if you like and serve right away!
  5. Delicious with rice, mashed potatoes, mashed cauliflower or pasta!
