Strawberry Brownies

What is better than a 3 ingredient dessert that everyone loves?! Even better, one that starts with a cake mix! Kids love these gooey butter type "brownies" made with a strawberry cake mix, oil and eggs, no butter! Mix, bake and then add a simple glaze. I serve them with whipped cream or vanilla ice cream or yogurt, delish!
Ingredients
Cake
  • 1 strawberry cake mix
  • 2 room temperature egg yolks
  • ⅓ cup of vegetable or canola oil
Glaze
  • 1 cup of powdered sugar
  • 2 Tbs of milk or water
Instructions
  1. Start by preheating the oven to 350 degrees. Then line an 8" baking dish with parchment paper, leaving a few extra inches on the ends to use as handles, spray with oil.
  2. Using a standing mixer or hand mixer, combine the cake mix, eggs and oil until well combined.
  3. The batter will be very thick, spread it into the prepared dish all the way to the edges, using a butter knife.
  4. Bake for 15 - 18 minutes, or just until they appear to be set.
  5. Remove from the oven and let them cool for 15 minutes, then lift them out of the dish using the "handles".
  6. While they are cooling, stir together the powdered sugar and milk, you want to have a fairly thin glaze. Spoon the glaze over the brownies to completely cover them.
  7. Cool them completely and and let the glaze set up before cutting into squares. That's it! Enjoy!
