Blueberry French Toast

Who doesn't love french toast!? Especially french toast with a warm blueberry/maple sauce with a hint of orange! This recipe is phenomenal for breakfast, brunch or dinner!
Ingredients
  • 2 cups of fresh or frozen blueberries
  • ¾ cup of maple syrup
  • 1 tsp of grated orange peel
  • 1 Tbs of cornstarch
  • 3 room temperature eggs, beaten
  • ¾ cup of whole milk
  • 1 tsp of pure vanilla
  • ¼ tsp ground nutmeg
  • 4 slicesof bread (brioche is perfect)
  • 3 Tbs of butter
  • confectioners sugar
  • 4 orange twists, optional
Instructions
  1. Here we go! In a small saucepan, combine blueberries, maple syrup and orange peel. Dissolve cornstarch in 2 Tbs water, and add to the blueberry mixture. Now, cook and stir until the mixture boils, reduce the heat and simmer about 1 minute or until thickened.
  2. Next, combine the eggs, milk, vanilla, and nutmeg, stir until well combined. Dip each slice of bread into the egg mixture. Cook each slice in small amount of butter in skillet or griddle about 2 minutes on each side until golden brown. To serve, plate the french toast and top with the blueberry mixture and sprinkle with powdered sugar if you like! Enjoy!
