Avocado Cucumber Salad

This is a delightful salad! Rich, buttery avocados are a perfect complement to crisp, fresh cucumber, then add sweet cherry tomatoes, red onion and crumbled blue cheese, then toss it all with a perfect balsamic dressing for one incredible salad! Serve with warm crusty bread and fruit for a complete meal!

Ingredients
Dressing
- ¼ cup of good quality Balsamic vinegar
- 1 tsp of Dijon mustard
- 2 tsp of sugar
- ½ tsp of kosher salt
- ¼ tsp of freshly cracked black pepper
- ½ cup of extra virgin olive oil
Salad
- 2 ripe avocados, sliced
- 1 cucumber, cut into chunks
- ½ cup of red onion, thinly sliced
- 1½ cups of cherry tomatoes
- 1 cup of crumbled blue or feta cheese
- sunflower seeds - optional
Instructions
- First, make the dressing, just combine the balsamic, Dijon, sugar, and salt & pepper in a medium bowl then slowly pour in the olive oil while whisking.
- Now for the salad, combine all of the salad ingredients in a large bowl and pour on half of the dressing, a little at a time, toss the salad and more dressing to taste. Sprinkle on the seeds if using. Bon Appetit!
Notes
You could always add some grilled chicken, steak or shrimp!
