Everyone needs a perfect baked bean recipe. This is my version for that classic, sweet and smokey summer side that I think is simply the best! It starts with bacon, how can you go wrong?
Ingredients:
Serves 6
• 1 – 28 oz can baked beans, plain variety
• 1 – 15 oz can of black beans, drained
• 4 bacon slices
• 1/2 of a medium onion, chopped
• 1/3 cup of green pepper, chopped
• 1 Tbs of Worcestershire sauce
• a dash of liquid smoke
• 2 Tbs of brown sugar
• 1 Tbs of Dijon mustard
• 1 Tbs of molasses
• 1/3 – 1/2 cup of bbq sauce
• 1/2 tsp each of salt & black pepper
Directions:
Drain the black beans in a colander and drain off a most of the sauce from the canned baked beans.
In a heavy skillet, over medium/high heat, cook the bacon until crisp, remove, drain on a paper towel and crumble.
Drain off most of the bacon drippings, leaving just enough to coat the skillet. Add the onions and green pepper to the skillet, saute over medium heat for 2 minutes.
In a casserole dish, add the beans, sauteed onion and green pepper, bacon and all of the remaining ingredients.
Mix well. Bake at 350° for 55 minutes to 1 hour. Let sit for 20 minutes or so before serving, or make early in the day and reheat. You’ll love em!
Note to cooks: You can also bake the beans in individual ramekins, but not as long, around 30 minutes.
