
A quick and easy pastry treat that is simply out of this world! Fresh blackberries, puff pastry and sweet Mascarpone cheese!
Ingredients:
Makes 4 large tarts
1 frozen puff pastry sheet, thawed in the refrigerator
12 oz of fresh blackberries
3 Tbs of sugar
6 oz of Mascarpone cheese, room temperature
1 tsp of vanilla extract
2 Tbs of powdered sugar
1 egg mixed with 1 Tbs of water for egg wash
1 Tbs of Turbinado sugar (could use regular granulated sugar
more powdered sugar for serving
Start by mixing the berries and sugar together in a mixing bowl and let rest. Stir together the mascarpone, vanilla and powdered sugar until smooth and creamy. Roll out the puff pastry to approximately 12 x 12 on a lightly floured surface and cut it into 4 equal squares. Place on a baking sheet lined with parchment paper. Fold in the edges of the pastry, then brush with the edges with egg wash and sprinkle with turbinado sugar. Prick the bottom with a fork and bake for 15 minutes. Remove from the oven and spoon in the Mascarpone mixture and spread the edges, but not the edges. Place the blackberries on top of the Mascarpone. Bake for 10 – 15 more minutes or until the pastry is golden and puffed. Let cool and sprinkle on a a little powdered sugar before serving. Also delicious with whipped cream! Enjoy!
I made 4 large tarts but you can make as many as you like, just cut out evenly sized shapes and continue on. You can also use any kind of fruit you like, cherries, blueberries, apples, etc.
