Chocolate Banana Bread


dsc07130Chocolate Banana Bread with a Chocolate Ganache! Banana bread is excellent on it’s own, but add three kinds of chocolate and pecans and it’s off the charts! Simple to make and you’ll probably have most of the ingredients already in your pantry! This will be a family favorite!

Ingredients:

  • 1 1/2 cups of all purpose flour
  • 1/2 cup of cocoa powder
  • 1 tsp of baking soda
  • 1/4 tsp of salt
  • 1/2 cup of soft butter
  • 1/2 cup of white sugar
  • 1/2 cup of brown sugar
  • 2 room temperature eggs
  • 1 tsp of vanilla
  • 4 very ripe bananas
  • 2 Tbs of sour cream
  • 1 cup of semi-sweet chocolate chips
  • 3/4 cup of pecan pieces
  • 1/2 cup of half & half
  • 1 cup of semi-sweet chocolate chips

Directions:
Preheat oven to 350°

To start, coat the bottom and sides of a 9 X 5 loaf pan with a little butter. Then in a large bowl, stir together the flour, cocoa powder, baking soda and salt. Using an electric mixer, beat the butter and both sugars together until well mixed. Then, add in the eggs, vanilla, bananas and sour cream, beat until well mixed. Remove the bowl from the mixer and fold in the flour mixture, the chocolate chips and the nuts. Pour the batter into the prepared pan.dsc07095Bake for 60 – 70 minutes. Test with a skewer or toothpick, it should come out clean. Let the bread cool on a rack. Then turn out. You can eat this right now and it is crazy delicious, but why not pour on a little more chocolate!dsc07100For the ganache: Place the chocolate chips in a small heatproof bowl. Then in a small saucepan, over low heat, bring the half and half to a simmer and pour it over the chocolate chips and stir until smooth and creamy.dsc07102Let it cool just enough to thicken a little, but still be thin enough to drizzle over the bread. That’s it! Just pour or drizzle over the loaf and serve! You’re gonna love this one!dsc07130
Note to cooks:  You could also stir in some peanut butter, I would say about 1/3 cup and you could use walnuts instead of pecans. Raisins or bits of dates would be good too! You can also skip the ganache and just sprinkle on some powdered sugar.
