Classic chili, perfect in every way, ground chuck, 3 kinds of beans, onion, celery, carrot, garlic, green pepper, tomatoes and sauce and spiced to perfection. I've been making this chili for over 30 years, and it was my mother's recipe, so I grew up on it, I think you'll love it as much as I do!

Ingredients
- 1 lb ground chuck or ½ chuck, ½ pork
- 1 tsp of chili powder for the meat
- 1 large onion, chopped
- 1 medium green pepper, chopped
- 2 small carrots, grated
- 3 garlic cloves, minced
- 1 15-oz can of dark red kidney beans, drained and rinsed
- 1 15-oz can of black beans, drained and rinsed
- 1 30-oz can of chili beans
- 1 28-oz can of crushed tomatoes
- 1 15-oz can of tomato sauce
- 1½ Tbs of cumin
- 2 scant Tbs of chili powder
- 1 tsp of celery salt
- 1 tsp cayenne or red chili flakes or to taste
- 1½ Tbs of sugar
- 1 tsp of salt
- ½ tsp of black pepper
- 2 Tbs Worcestershire sauce
Toppings
- shredded cheddar or monterey jack cheese
- chopped onion
- chopped green onion
- oyster crackers
- sour cream
- corn chips
Instructions
- In a large pot, sprinkle the chili powder on the chuck, cook and stir over medium/ high heat for 5 - 6 minutes, then remove from the pot and drain if necessary.
- To the same pot, over medium heat, saute the onion, green pepper, carrots and garlic for about 5 - 6 minutes. Now, add in the kidney beans, black beans, chili beans, tomatoes, tomato sauce, cumin, chili powder, celery salt, cayenne, sugar, salt & pepper and Worcestershire, stir well to combine, add the ground chuck back in and stir again.
- Bring to a boil, reduce heat to low and simmer for an hour or so. And as alway, taste and add salt or pepper if needed. That's all! serve with your favorite toppings, scroll to notes to see my recipe for easy baked oyster crackers, they're addicting!
Notes
To make the oyster crackers: Add 1 bag of oyster crackers to a bowl and toss with 3 Tbs of olive oil, 1½ tsp of salt, ¼ tsp of pepper and 1 tsp of garlic powder, mix with your hands until the crackers are well coated. Spread evenly on a baking sheet and bake at 350 degrees for 15 minutes.
