Take advantage of the bountiful basil and whip up some Pesto and make that delicious classic, pasta pesto! It only takes minutes!
Ingredients:
• 2 cups fresh basil leaves, packed
• 1/3 cup pine nuts (can use chopped walnuts or use a combination)
• 4-5 garlic cloves, whole
• 1/2 cup freshly grated Parmesan cheese
• dash of nutmeg
• 1/2 tsp of salt
• 1/2 tsp of pepper
• 1/2 cup freshly grated Parmesan cheese
Directions:
In a food processor, add basil, nuts and garlic and process until well combined. Slowly, pour in the olive oil, process until smooth.
Add salt and pepper and a dash of nutmeg, process another minute, then pour into a bowl, stir in the Parmesan cheese.
It’s that easy! I like this tossed with good old spaghetti, just cook the pasta according to package directions, drain and toss with the pesto sauce and sprinkle more Parmesan on top!
