Easy Beef Tostadas

These are incredible tostadas! Ground beef is sauteed with onion, Mexican seasonings, garlic, peppers, tomatoes and black beans! Served on a cheesy, toasted tortilla shell, and topped with your favorite toppings, sour cream, avocado, shredded lettuce, salsa, Margaritas, whatever you like. I guarantee these will be a family favorite!

Ingredients
  • 1 lb of ground beef, chuck or sirloin
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 red or green bell pepper, diced
  • 1 jalapeño, seeded and diced
  • 1 Tbs of chili powder
  • 1 tsp of oregano
  • 1 tsp of cumin
  • 1 tsp of sugar
  • 2 tsp of kosher salt
  • 1 tsp of freshly ground black pepper
  • 1 cup of chopped tomatoes
  • ½ cup of water
  • 1 cup of black beans, drained
  • 12 small flour tortillas ( I used whole wheat )
  • 1 Tbs of olive oil
  • 1½ - 2 cups of Cheddar or Monterey Jack cheese, shredded
Instructions
  1. Preheat the oven to 400 degrees. Heat a large heavy skillet over medium/high heat, then add the ground beef and the onion, cook and stir for 5 - 6 minutes. (if using ground sirloin, use 1 Tbs of olive oil to cook)
  2. Now add the garlic, bell pepper, and the jalapeño, cook for 5 more minutes.
  3. Add the chili powder, oregano, cumin, sugar, salt, and pepper. Give it a good stir then add the tomatoes and the water and stir again.
  4. Cook, uncovered, for about 15 minutes, until the water is absorbed then add in the black beans, stir and cook for 2 - 3 more minutes.
  5. While that's cooking, place the tortillas on a baking sheet, spray or brush with oil, and bake for 6 - 7 minutes or until golden. Remove from the oven and sprinkle them with grated cheddar and return to the oven just long enough to melt the cheese.
  6. Now just pile some of the beef mixture on each tostada and top with your favorites, I like sour cream, sliced avocado and salsa. Shredded lettuce and more cheese is also delish!
