My personal favorite! Savory, rich, cheesy, classic French Onion Soup! It just doesn’t get more comforting than this!
Ingredients:
Serves 4
• 4 large or 3 jumbo onions – sliced
• 2 Tbs of canola oil
• 1 Tbs of butter
• 3 garlic cloves – minced
• 1 Tbs of brown sugar
• 1/2 cup of flour
• 7-8 cups of beef broth
• 2 thyme sprigs
• 1 tsp of freshly ground black pepper
• 1 tsp of kosher salt
• 3 bay leaves
• 1 cup of dry red wine
• 4 french baguette slices ( 1/2 inch thick)
• olive oil for drizzling on baguette slices
• 1/2 lb of Gruyere cheese – grated (can use swiss)
Directions:
In a large soup pot or dutch oven, over medium heat, cook the onions in the oil and butter, stirring occasionally until deeply browned and very soft, it will take around 25 – 30 minutes, turn the heat to low for the last 15 – 20 minutes.
Add in the garlic and sugar and cook for another 10 minutes, then, sprinkle in the flour, stir well to combine and add in the broth, cook and stir until thickened.
Now, add the thyme, salt & pepper and bay leaves and cook for 30 minutes. Add in the red wine, stir to combine and cook for 5 more minutes.
Drizzle baguette slices with a little olive oil and broil for 2 minutes, sprinkle with cheese and broil until cheese is melted, about 2 more minutes.
To serve, ladle the soup into bowls and place one cheesy baguette slice on top of each. Delish!!!!
