The perfect partner to so many entrees! Perfect mashed potatoes with lots of insanely good garlic! They are especially good when you want to sop up some luscious sauce, like for beef stew! Adjust the amount of garlic to your families taste.

Ingredients
- 3½ lbs of russet potatoes
- 8 - 10 cloves of garlic, peeled and smashed
- 1 Tbs of salt for cooking
- cold water to cover potatoes
- 2 cups of half and half, heated
- 1 Tbs of kosher salt or to taste
- 2 tsp of black pepper or to taste
- ½ cup of softened butter
- chopped chives, parsley, thyme or rosemary, optional
Instructions
- To start, peel and quarter the potatoes, place them along with the garlic cloves in a large pot and cover with cold water by 1 inch and add 1 Tbs of salt. Heat to boiling over medium/high heat, then lower the heat to medium and cook for 25 - 30 minutes or until potatoes are tender when pierced with a paring knife.
- Drain the potatoes and garlic, then return to the pot and add in the warm half & half, slowly, a little at a time, stirring with a heavy whisk until you get the right creamy consistency, then stir in the butter, and salt & pepper, sprinkle with chopped herbs if using. Easy and delicious!
