Grilled Peaches with Blackberry Sauce

Grilled peaches are a sweet treat in the summertime when they are juicy and ripe! Insanely delicious, brushed with butter, rum and cinnamon sauce, grilled, then topped with fresh blackberry sauce and vanilla ice cream! Incredible!

Ingredients
Blackberry Sauce
- 1 cup of fresh blackberries
- 1 Tbs of water
- 3 Tbs of granulated sugar
Butter/Rum Sauce
- 2 Tbs of salted butter
- 1 Tbs of rum
- ½ tsp of cinnamon
- 1Tbs of brown sugar
Peaches
- 4 medium peaches, firm but ripe, halved
- 1 cup of vanilla frozen yogurt or ice cream
Instructions
- Prepare the grill with all coals on one side and make sure the grate is clean.
- In a food processor puree the blackberries with the water and sugar.
- In a small saucepan over medium heat, melt the butter, then add the sugar, rum and cinnamon, stir to dissolve. Remove the saucepan from the heat.
- Brush the peach halves all over with the butter mixture.
- Grill the peach halves over indirect heat, with the lid on until they start to brown and soften, about 12 - 14 minutes. Gently squeeze with your tongs, they should feel soft but not mushy. Turn and brush on more glaze every 3 minutes or so.Remove the peaches from the grill. To serve, spoon on some of the blackberry sauce on each peach half and top with vanilla ice cream or frozen yogurt. Enjoy!
