Grilled Pork Chops & Peaches

I can't even describe how delicious these pork chops are, but I'll try! First, they are marinated in balsamic, honey, garlic and thyme so they are juicy and full of flavor, then they are perfectly grilled along with fresh peaches that have been tossed with maple syrup and balsamic! Then, before your first bite, drizzle on some of that heavenly peach juice and WOW, a flavor explosion! This recipe is a keeper guys!!!

Ingredients
- 2 thick cut pork chops
Marinade
- ⅓ cup balsamic vinegar
- ⅓ cup extra-virgin olive oil
- 3 Tbs of honey
- 1 Tbs of fresh thyme leaves
- ½ tsp of kosher salt
- ½ tsp of freshly ground pepper
- 2 garlic cloves chopped, or 1 tsp of garlic powder
Peaches
- 2 peaches, pitted and quartered
- 2 Tbs of maple syrup
- 3 tsp of good-quality balsamic vinegar
- salt & pepper
Finish
- 2 tsp of butter
- fresh thyme for garnish - optional
Instructions
- Place the chops in a ziplock bag, mix up the marinade ingredients and pour over the chops, refrigerate for at least 1 hour.
- Remove them from the marinade and let them come to room temperature for 20 minutes before grilling.
- In a bowl, combine the peaches, maple syrup, balsamic and just a little salt & pepper, toss to coat evenly. Make sure to save this maple syrup mixture for later.
- Prepare your grill, place all of the coals on one side. Place the chops on the grill over the hottest part of the fire and cook about 3 - 4 minutes per side. Move the chops to the cooler part of the grill and cook about 4 - 5 more minutes per side, check the temperature with a meat thermometer, it should be no more than 145 degrees. Place the peaches over direct heat and sear, turning with tongs, place on the cooler side with the chops and cook until the chops are done, or a little longer if you like them softer.
- To serve, place the chops and peaches on a platter, place a little butter on top and drizzle all with the peach liquid. Enjoy!
