These onions are so darn good! They are stuffed with bacon, blue cheese, panko and thyme, then grilled! Incredible with chicken and of course pairs beautifully with steak!
Ingredients:
- 2 large onions
- 3 pieces of bacon, cooked and crumbled
- 2 Tbs of butter
- 1/3 cup of blue cheese
- 1 heaping Tbs of Panko bread crumbs
- 1 scant tsp of granulated garlic
- 1 tsp of fresh thyme or 1/2 tsp of dried thyme
- dash of salt
- 1/2 tsp of pepper
Directions:
Cut the top and bottom off of the onions evenly and peel them. Use a spoon or a melon baller and spoon out the flesh, try not to go through the bottom, but if you do, just cover the hole with a little piece of onion (I went thru on both onions!)
In a small bowl, stir together the butter, blue cheese, Panko, garlic, thyme and salt n pepper. Mix well, then stir in the bacon. Spoon the mixture into the onions, dividing it evenly between them.Place the onions in the middle of a 12 x 12 piece of foil, fold up the sides and crimp to completely seal. Set up your grill for indirect heat, place all of the coals on one side, place the onion packets on the grill off of the direct heat. Close the lid and cook for 35 minutes. All done! Open the packets carefully, plate the onions and pour over any sauce that may have collected in the foil packet. Enjoy, I know you will!
