Honey Mustard Chicken Salad

Elaine from Seinfeld would love this "big salad"! The dressing doubles as the marinade, it's a luscious combination of honey, whole grain, and dijon mustards, apple cider vinegar and garlic! This is quick and easy, the chicken does need a little time to soak up the goodness. Then just cook your bacon & chicken and assemble! Think about the goodness here, crispy romaine, creamy avocado, smokey bacon, sweet cherry tomatoes, red onion slices and hard-boiled eggs and of course that amazing tender, flavor-packed chicken! DELISH!

Ingredients
Dressing/Marinade
- ⅓ cup of honey
- 2 Tbs of whole grain mustard
- 3 Tbs of Dijon Mustard
- 2 tsp of apple cider vinegar
- 1 tsp of kosher salt
- ½ tsp of black pepper
- 3 Tbs of olive oil
- 2 garlic cloves, minced
Chicken and Salad
- 2 tsp of olive oil
- 1 lb of boneless, skinless chicken breast
- 4 cups of romaine lettuce, torn into pieces
- 1 avocado, pitted and sliced
- ⅓ of a red onion, thinly sliced
- 4-5 slices of bacon, cooked
- 1-2 hard-boiled eggs, sliced
- 1 cup of cherry tomatoes
Instructions
- Start by making the dressing/marinade. In a medium-sized bowl, combine the honey, both mustards, cider vinegar, salt & pepper, olive oil and garlic, whisk until well combined.
- Cut the chicken breasts into half horizontally and place in a shallow bowl or ziplock bag, pour in half cup of the dressing/marinade and let rest for at least 1 hour, then remove from the marinade and shake off the excess. Drizzle the olive oil In a heavy skillet, over high heat, cook the chicken about 2 minutes on each side, transfer to a plate and wipe out the skillet. Cook the bacon until crispy, remove and crumble.
- Cut the chicken into slices and assemble the salad. Place the romaine on a platter and drizzle on a little of the dressing. Arrange the avocado, onion, bacon, eggs, tomatoes and chicken on top and drizzle on the remaining dressing. Warm crusty bread is perfect with this amazing salad, enjoy!
Notes
You don't see cherry tomatoes in the picture because I jumped the gun and shot it before I added them! You can also add all ingredients to a large bowl, add the dressing and toss, it combines better that way, I arranged it on a platter because it makes for a prettier presentation.
