Yes, this is peasant food! A truly scrumptious combination of Italian sausage, eggs, bread, spinach and herbs. Perfect for breakfast, brunch or dinner! Make the day before and pop in the oven til bubbly and golden.
Ingredients:
Serves 6 – 8
- 1 Tbs of olive oil
- 1 lb of Italian sausage, casing removed
- 1 onion, chopped
- 1 box of spinach, thawed and squeezed of all moisture
- 4 cloves of garlic, minced
- 1 tsp of kosher salt
- 1 tsp of black pepper
- 3 fresh basil leaves, chopped
- 2 cups of whole milk
- 10 eggs, room temperature
- dash of nutmeg
- 1 french baguette, torn into small pieces
- 1 cup of fresh Parmesan cheese
Directions:
Preheat oven to 350°
Butter the bottom of a 3 qt casserole dish. In a large skillet, over medium/high heat, add the olive oil and cook the sausage for 6 -7 minutes.Remove the sausage from the skillet and add in the onions, cook for 3 minutes, then add the spinach, garlic, salt, pepper and basil and cook for 1 more minute.Whisk together the milk and eggs and add a dash of nutmeg. Place 1/3 of the bread pieces in the greased casserole dish, then sprinkle in 1/3 of the sausage, 1/3 of the spinach mixture and 1/3 of the Parmesan cheese, continue to layer then pour the milk/egg mixture over the top.
Bake for 45 minutes. Let it rest for 5 – 10 minutes before serving.
