Italian Tortellini Soup

This is a bowl of warmth and comfort, Italian style! Tortellini soup with Italian sausage, fresh spinach and veggies, simmered with wine, beef broth, tomatoes and herbs, then topped with fresh parmesan cheese! Serve with warm, crusty bread for a heartwarming meal! I used turkey sausage to lighten this up and it was delicious. I think this is one of the best soups I've ever made!

Ingredients
- 1 Tbs of olive oil
- 1 pound of Italian turkey sausage, or Italian pork sausage
- 1 cup of chopped onion (1/2 of 1 large onion)
- 3-4 large garlic cloves, chopped
- 5 cups of beef stock
- 2 cups of whole canned tomatoes
- 1 cup of tomato sauce
- ½ cup of dry red wine
- 1 medium yellow squash or zuchinni, chopped
- 1 large carrot, chopped
- 1 medium-sized red or green bell pepper, chopped
- 1 tsp of kosher salt
- ½ tsp of black pepper
- 2 tsp of dried oregano
- 2 tsp of dried basil
- 2 tsp of sugar
- 9 ounces of fresh, cheese tortellini
- 5 - 6 oz of fresh spinach
- ¼ cup of freshly grated parmesan cheese or to taste
Instructions
- in a large heavy soup pot, over medium-high heat, add in the oil and cook the sausage until all pink is cooked out, if using pork sausage, omit the oil. Then, using a slotted spoon, transfer the sausage to large bowl. To the same pot, add a little more oil if needed and add in the onion, cook for 5 minutes, then add in the garlic and cook 1 more minute, return the sausage back to the pot.
- Add the stock, tomatoes, tomato sauce, wine, zucchini, carrot, bell pepper, salt, pepper, oregano, basil, and sugar. Smash up the tomatoes with a wooden spoon, simmer until vegetables are tender, about 40 minutes.
- Add the tortellini to the soup and cook until tender, about 8 minutes, then add in the spinach and stir until wilted, give it a taste and add salt if needed. To serve, ladle the soup into bowls and sprinkle with parmesan cheese, delicious with warm crusty bread! Enjoy!
