Italian White Bean and Sausage Soup

This is a traditional Italian soup made by all Italian mothers and grandmothers using white beans, Italian sausage and whatever veggies that are on hand. My mother made this frequently in the cold winter months and always added spinach, or other greens, kale is another good choice. Your kitchen smells heavenly while this soup simmers! Freshly grated Parmesan is a must! This is a very rustic soup, with phenomenal flavor! To lighten this up you can use turkey sausage. Delish with warm, crusty bread!

Ingredients
- 1 Tbs of olive oil
- 1 lb of Italian pork sausage or Italian turkey sausage
- 1 medium yellow onion, coarsely chopped
- 1 large carrot, coarsely chopped
- 1 medium russet potato, peeled and coarsely chopped
- 3 medium cloves garlic, coarsely chopped
- 1 Tbs of minced fresh rosemary
- 2 (15 oz) cans of Great Northern beans drained and rinsed
- 1 (14 oz) can of diced fire-roasted tomatoes
- 5 cups of unsalted chicken stock
- baby spinach leaves, about 4 handfuls
- kosher salt and freshly ground black pepper to taste
- freshly grated Parmesan cheese
- crusty bread for serving
Instructions
- In a large dutch oven or soup pot, heat the oil over medium-high heat. Add the sausage breaking it up with a wooden spoon and cook for 6 - 7 minutes, then transfer it to a bowl.
- Add the onion, carrot, and potato to the pot, lower the heat to medium, and cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes. Add the garlic and rosemary, and cook, stirring, until fragrant, about 30 seconds. Add the beans, tomatoes, and stock, bring to a simmer and cook for 10 minutes, skim foam from the top with a large spoon.
- Add in the spinach and reserved sausage, and simmer for 5 minutes. Now, just season to taste with salt and pepper. I add some grated parmesan now and more when serving.
- Warm crusty bread is delish with this soup, Buon Appetito!
