These potatoes are sinful! Think about the cast of characters….mashed potatoes, applewood smoked bacon, smoked gouda, green onions, sour cream and butter! How can it be anything but sinfully good?!
Ingredients:
Serves 10 – 12
- 8 – 9 pieces of thick cut, applewood smoked bacon
- 5 large russet potatoes
- 6 – 7 green onions, chopped, white and pale green parts
- 8 oz of smoked gouda cheese – divided use
- 1 cup of sour cream
- 1 cup of whole milk
- 4 Tbs of butter
- 2 tsp of salt
- 1 tsp of pepper
Directions:
Start by cooking the bacon until crispy, crumble and set aside. Peel and quarter the potatoes, cook in large pot of salted water until fork tender. While the potatoes are cooking, chop the green onions and shred the gouda. Drain the potatoes and add them back to the pot.
Add in the sour cream, milk, butter and the salt & pepper. Using a potato masher, smash until smooth. Preheat the oven to 375°.Then, add the bacon, half of the gouda and the green onions to the potatoes and stir until well combined.Spoon into a 9 x13 casserole dish and sprinkle on the remaining gouda.Bake for 30 minutes at 375° until the cheese is melty and beautiful!
