
Layers of buttery, flaky, sweet biscuits, red ripe berries and sweetened whipped cream! This is the ultimate strawberry shortcake recipe!
Ingredients:
Biscuits:
- 2 cups of all purpose flour
- 2 tsp of baking powder
- 1/4 tsp of baking soda
- 3 Tbs of sugar
- dash of salt
- 1 stick of cold butter, cut into small pieces
- 3/4 cup of buttermilk
- small amount of cream and sugar for sprinkling on the biscuits before baking
Strawberries:
- 4 pints of strawberries, washed, hulled and sliced
- 1 Tbs of fresh lemon juice
- 3 Tbs of sugar
Whipped Cream:
- 1 cup of cold heavy cream
- 3 – 4 tsp of sugar
Directions:
In a medium sized bowl, add the strawberries, sugar and lemon juice, stir to combine and let sit for at least an hour for the berries to become juicy.
In a mixing bowl, stir together the flour, baking powder, baking soda, sugar and salt.
Add the butter and using your fingers, rub it in with the flour mixture until it is pea-sized.
Pour in the buttermilk, stir to combine.
Divide the dough into 6 pieces, very gently, shape into a ball, place on a parchment-lined baking sheet and flatten slightly into a disc. It’s important not to overwork the dough.
Brush with a little cream and sprinkle with sugar.
Bake for 20 – 25 minutes until golden.
For the whipped cream, use a mixer with a wire whisk, add the cream and the sugar and beat until it forms soft peaks.
To assemble the shortcakes, cut the biscuits in half using a serrated knife, place the bottom of the biscuit in a bowl, spoon on some strawberries, then some whipped cream, put the top on, spoon on more strawberries and whipped cream, dig in! (you can also crumble the biscuits in you prefer)
