Roasted Italian Potatoes

When my herb garden is overflowing I love to make recipes loaded with herbs. This recipe for roasted potatoes is super simple but the flavor is incredible with garlic, olive oil, fresh thyme, oregano and Romano cheese, your kitchen smells heavenly while they roast! A perfect accompaniment for grilled meats!

Ingredients
- 3 lbs of baby red potatoes, cut in half
- 2 Tbs of olive oil
- 3 garlic cloves, chopped
- 1 tsp of kosher salt
- ½ tsp of black pepper
- 2 Tbs of fresh thyme leaves
- 2 Tbs of fresh oregano, chopped
- ⅓ - ½ cup of grated Romano or Parmesan cheese
Instructions
- Preheat the oven to 375 degrees. Place the potatoes on a baking sheet covered with parchment for easy clean-up. Now, just drizzle on the olive oil and sprinkle on the salt, pepper, thyme, oregano and the Romano cheese, toss with your hands to combine, turn the potatoes cut side up and make sure the cheese is mostly on top of the potatoes.
- Bake for 40 - 45 minutes, if you like, turn the broiler on and broil for a minute or two for more color.
