Amazing flavor! Slow cooked Italian chicken stew! Chicken thighs are cooked low and slow in an aromatic bath with wine, chicken broth, tomatoes, Italian spices, garlic, onion, potatoes and carrots! How could this not be incredible! Again, your slow cooker does the work, just brown the chicken and put everything else in, the aroma is intoxicating! I like to serve this on a bed of pasta, spaghetti or angel hair.

Ingredients
- 8 chicken thighs (boneless, skinless or bone-in skin on, your choice)
- ¾ cup of flour
- 2 tsp of kosher salt
- 1 tsp of black pepper
- 2 Tbs of canola or vegetable oil
- ⅓ cup of dry white wine
- 1 (28 oz) can of whole or crushed tomatoes with their juices
- ½ cup of chicken broth
- 2 tsp of basil
- 2 tsp of oregano
- 1 Tbs of sugar
- 3 fresh thyme sprigs - optional
- 4 cloves of garlic, minced
- 1 large onion, cut into chunks
- 3 medium potatoes, cut into chunks
- 6 - 7 carrots, cut into pieces
Instructions
- Start by dredging the chicken in flour, salt and pepper, Heat the oil in a large, heavy skillet, over medium/high heat, add in half of the chicken and brown for 4 - 5 minutes on each side, transfer to a plate and brown the remaining chicken.
- Add the wine, chicken broth, tomatoes, basil, oregano, sugar, garlic and thyme to the slow cooker, give it a stir.
- Now, nestle in the chicken and place the potatoes, onion and carrots on top. When this starts to cook down, you'll be able to stir it easier. Put the lid on and cook on low for 6 hours or until everything is fork tender. If you want to thicken the sauce before serving, just stir together about 3 Tbs of flour with some of the hot sauce from the slow cooker then add it back in and stir until thickened. I like to serve this on a bed of spaghetti. Buon Appetito!
