Southwest Baked Chicken

Tender, juicy chicken breasts are bathed in a luscious mixture of fire-roasted tomatoes, green chilis, black beans and Southwest spices, then topped with cheese and baked! A flavor explosion and the good news is it's quick, easy and healthy! I'm sure it will be a family favorite!

Ingredients
  • 3 chicken breasts cut in half length-wise
  • 1 (14 oz) can of fire-roasted diced tomatoes
  • 1 (3 oz) can of diced green chiles
  • 1 (14 oz) can of black beans, drained
  • 2 tsp of chili powder
  • 1 tsp of dried oregano
  • ½ tsp of granulated garlic
  • ½ tsp of ground cumin
  • ½ tsp of sugar
  • 1 tsp of kosher salt
  • 1½ - 2 cups of shredded Manchego Cheese or Colby Jack cheese
  • sour cream for garnish
Instructions
  1. Here we go! Preheat the oven to 350 degrees.
  2. Grease a rectangular baking dish (9 X 12) with non-stick cooking spray.
  3. In a large bowl combine, tomatoes, chilies, black beans, chili powder, oregano, garlic, cumin, sugar and salt.
  4. Spread half of the mixture on the bottom of the greased pan and place the chicken breasts on top and season with salt and pepper.
  5. Now spoon the remaining tomato and black bean mixture on top.
  6. Sprinkle with cheese.
  7. Cover with foil and bake until chicken is cooked through and cheese is melted about 35 minutes. All done! Enjoy! Delish with a dollop of sour cream on top!
