Tender, juicy chicken breasts are bathed in a luscious mixture of fire-roasted tomatoes, green chilis, black beans and Southwest spices, then topped with cheese and baked! A flavor explosion and the good news is it's quick, easy and healthy! I'm sure it will be a family favorite!

Ingredients
- 3 chicken breasts cut in half length-wise
- 1 (14 oz) can of fire-roasted diced tomatoes
- 1 (3 oz) can of diced green chiles
- 1 (14 oz) can of black beans, drained
- 2 tsp of chili powder
- 1 tsp of dried oregano
- ½ tsp of granulated garlic
- ½ tsp of ground cumin
- ½ tsp of sugar
- 1 tsp of kosher salt
- 1½ - 2 cups of shredded Manchego Cheese or Colby Jack cheese
- sour cream for garnish
Instructions
- Here we go! Preheat the oven to 350 degrees.
- Grease a rectangular baking dish (9 X 12) with non-stick cooking spray.
- In a large bowl combine, tomatoes, chilies, black beans, chili powder, oregano, garlic, cumin, sugar and salt.
- Spread half of the mixture on the bottom of the greased pan and place the chicken breasts on top and season with salt and pepper.
- Now spoon the remaining tomato and black bean mixture on top.
- Sprinkle with cheese.
- Cover with foil and bake until chicken is cooked through and cheese is melted about 35 minutes. All done! Enjoy! Delish with a dollop of sour cream on top!
