Ahhh, sweet and sour shrimp! A favorite at Chinese restaurants with its succulent shrimp, and luscious sauce! Now you can easily make it at home and it's even better and healthier! This is the perfect recipe for the sauce and the shrimp is not breaded and fried, but simply stir-fried with green pepper, you can add in any veggie you like, snow peas, onions, mushrooms, etc, be our own chef and it will be spectacular! The best part is the sauce is made with ingredients you probably already have in your pantry. Happy stir-frying!

Ingredients
- 2-3 garlic cloves, minced
- ½ cup of ketchup
- 1 Tbs of soy sauce
- ½ cup of white vinegar
- ¾ cup of brown sugar
- ½ cup of white sugar
- 1 can of pineapple chunks, drained, juice reserved
- ¾ cup of pineapple juice (from the can)
- 4 Tbs of cornstarch
- 1¼ lbs of large shrimp, peeled and deveined
- 1 large or 2 small green peppers, chopped into bite-sized pieces
- cooked rice for serving
Instructions
- For the sauce, in a large saucepan, over medium heat, drizzle in a little oil, then stir-fry the garlic. Now add in the ketchup, soy sauce, vinegar, and the brown and white sugar. Whisk until well combined. In a separate bowl, stir together ¾ cup the pineapple juice and the cornstarch. Whisk this into the ketchup mixture, bring to a boil, then reduce to low and simmer for a few minutes until nice and thick.
- For the shrimp and peppers, heat a wok or a cast iron skillet over medium/high heat, drizzle in a little oil then add in the bell pepper, stir-fry until it just starts to soften, 3-4 minutes, then add in the shrimp, stir-fry until opaque.
- Now add in the pineapple and the sauce, stir well to coat and heat thru.
- Delicious served over brown rice, enjoy!
