This is so simple and so scrumptious! A rustic tomato tart-like masterpiece! No meat, just ripe tomatoes that become almost caramelized because we draw out lots of the moisture. The dough can store bought, so it comes together in a jiffy. Just sprinkle Gouda chesse over the dough, arrange the tomatoes and garlic and bake! Rustic and elegant at the same time!

Ingredients
- 1 refrigerated pizza crust
- 1½ lbs of ripe, sliced tomatoes
- 4 garlic cloves, sliced
- 1 tsp of kosher salt
- 4 oz of Gouda cheese, grated
- 1 egg, beaten
- kosher salt
- freshly ground black pepper
- chopped chives - optional
Instructions
- Start by placing the tomatoes single layer on a baking sheet or large pan, sprinkle with salt and ½ of the sliced garlic, then let rest for 15-20 minutes.
- Now drain and place the tomatos on paper towels, pat dry, then preheat the oven to 400 degrees.
- Flour your surface and the rolling pin and roll the dough out to a 14" round as thin as you can.
- Transfer the dough to a large baking sheet or pizza pan lined with parchment.
- Now scatter the cheese over the dough leaving a 1½" border. Arrange the tomatoes and garlic over the cheese. Fold the edges of the dough up and over the filling about 2 inches, overlapping along the way.
- Brush the dough with the beaten egg.
- Sprinkle the tomatoes with a little bit more salt and freshly ground black pepper.
- Chill in the freezer for 10 minutes.
- Bake for 55 - 65 minutes. Let cool on the baking sheet for 6 - 8 minutes, sprinkle with chives, slice, serve and enjoy!
Notes
Place your Gouda in the freezer for about 10 minutes for easier grating.
