This must be the quickest, yet most delicious fish recipe ever! It literally takes minutes to put on the table and it is to die for!
Ingredients:
Serves 3 – 4
• 2 lbs of trout filets
• 1/3 cup of toasted almonds
• 1/2 stick of butter
• 1 clove of garlic, crushed
• juice from 1 lemon
• 1/2 tsp of kosher salt
• 1 Tbs of fresh parsley, chopped (plus a little more for garnish)
• 1/3 cup of flour
• 1 tsp of kosher salt
• 1/2 tsp of freshly ground black pepper
• 1 tsp of paprika
• dash of onion powder
• dash of garlic powder
Directions:
First, toast the almonds in a dry skillet over medium heat just until fragrant, about 4-5 minutes.
Next, make the butter lemon sauce, melt the butter, garlic, lemon juice and salt in a small saucepan over low heat until the butter is melted. Stir in the parsley. Discard the garlic clove. Taste and add more salt if needed.
Cut the fish filets into serving size pieces. In a shallow dish, add the flour, salt, pepper, paprika, onion powder and garlic powder, stir to combine and dredge the fish on both sides with the flour mixture.
Place in a foil lined, shallow baking pan, sprayed with cooking oil, skin side down. Spoon a little of the butter sauce over each filet.
Broil the fish 4 inches from the broiler for 10 minutes.
Place the fish on a platter or individual plates and pour over the remaining butter sauce.
Sprinkle on the toasted almonds. Garnish with a little more chopped parsley.
Serve immediately and enjoy!
