Very Berry Pie

I love this pie! You can make this any time of year because you're using frozen berries. A store-bought pie crust makes this quick and easy, the flavor is phenomenal! I like to use an egg wash with a dash of salt for a beautiful golden color on the crust and a sprinkling of turbinado sugar for sparkle and crunch!

Ingredients
  • 1 (32 oz) bag of mixed berries, thawed and well drained
  • ¾ cup of sugar
  • ¼ cup of cornstarch
  • ½ tsp of cinnamon
  • 1 Tbs of fresh lemon juice
  • dash of salt
  • 2 - 9" refrigerated pie crusts.
  • 1 Tbs of butter, cut into small pieces
  • 1-2 Tbs of Turbinado or granulated sugar
Eggwash
  • 1 egg
  • pinch of salt
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a large bowl, combine the berries, sugar, cornstarch, cinnamon, lemon juice, and salt.
  3. Line a 9" pie plate with one of the crusts. Pour in the fruit and dot with butter. Top with the second crust and crimp the edges.
  4. Cut 3 slits for steam vents and mix the egg with the salt, let sit for a few minutes, then brush it on the entire crust. Now just sprinkle on the sugar.
  5. Place the pie on a baking sheet and bake for 30 minutes at 350 degrees, then increase the heat to 375 and bake for 20 more minutes, it will be beautifully golden brown. You will probably have to cover the edge of the crust to prevent over-browning.
  6. Let cool completely, then slice and dig in, delicious with whipped cream or ice cream!
Notes
An egg beaten with a pinch of salt makes for a beautiful brown color on your crust, so much prettier than just an egg beaten with water!
