I love marinated mushrooms and they are a snap to make! I always have these around for the holidays, I make them while herbs are still growing in my garden and make a large batch, they keep in the fridge for a month! Everyone loves these!
Ingredients:
Makes 1 quart
- 1/3 cup of red wine vinegar
- 1/3 cup of extra virgin olive oil
- 1 – 1/2 lbs of white button mushrooms, dirt brushed off
- 5 garlic cloves, chopped
- 1 tsp of salt
- 1 shallot, minced
- 3 Tbs of red bell pepper, finely chopped
- 1 tsp of fresh basil, chopped
- 1 tsp of fresh oregano, chopped
- 1 tsp of fresh thyme, chopped
- 1/2 tsp of sugar
- 2/3 cup of water
- 2 tsp of fresh lemon juice
- 1/4 tsp of red pepper flakes for heat – optional
Directions:
In a large saucepan, add all ingredients, stir and bring to a boil, reduce the heat to low and simmer for 6 minutes. Ladle into a clean quart jar, place the lid on tightly and refrigerate overnight before serving.
