One of the simple and luscious pleasures in life, Peach Cobbler! Fresh, ripe peaches tossed with sugar and a hint of cinnamon, topped with a batter crust and baked until hot and bubbly, serve warm with vanilla ice cream, this is the very best cobbler recipe I've tried! I insist you use fresh peaches!

Ingredients
- ½ cup of butter
Batter
- 1 cup of flour
- 1 cup of white sugar
- 1 Tbs of baking powder
- ¼ tsp of cinnamon
- 1 cup of whole milk
Peaches
- 10 peaches, pitted, peeled and sliced
- ¾ cup of white sugar
- ¼ cup of brown sugar
- 2 tsp of cornstarch
- 2 tsp of fresh lemon juice
- ¼ tsp of cinnamon
- turbinado sugar - optional
Instructions
- Preheat the oven to 375 degrees, place the butter in a 9 X 13 baking pan, pop in the oven to melt, remove from the oven. Mix up the batter in a large bowl, stir together the flour, sugar, baking powder and cinnamon, then stir in the milk, pour this mixture over the butter, but don't stir.
- Place the peaches, sugars, lemon juice, cornstarch, and cinnamon in a large saucepan or skillet over medium/high heat and bring to a boil, stirring to combine. Spoon this over the batter evenly and again, don't stir.
- Now, just bake for 45 minutes. Beautiful! This is an extra step, I like to sprinkle on turbinado sugar when the cobbler comes out of the oven, adds a nice crunch and a little more sweetness, delish with whipped cream or vanilla ice cream!
