Ribeye with Garlic, Butter & Parsley

The perfect ribeye steak! This is a very simple recipe for a fat, juicy ribeye, beautifully seared in a cast iron skillet and finished with garlic, butter and parsley. It's quick and easy, and is so perfect for entertaining, who wouldn't love this! If you don't have a cast iron skillet, use the heaviest you have, or a grill pan, of course outside on the grill is perfect too!

Ingredients
- 2 thick ribeye steaks, room temperature
- 2 Tbs of butter, room temperature, divided use
- 2 cloves of garlic, minced
- 1 Tbs of fresh parsley, finely chopped
- kosher salt
- freshly ground black pepper
- 1 Tbs of canola oil
Instructions
- Take your steaks out of the fridge and let them sit at room temperature at least 30 minutes. Preheat the oven to 350 degrees. In a small bowl, stir together 1 Tbs of butter, garlic and parsley, season with a little salt and pepper
- Season both sides of the ribeyes with a little salt and pepper. Now heat the oil and the remaining 1 Tbs of butter in a large, heavy skillet, over high heat, cast iron if you have one, heat until it almost reaches the smoking point. Add the steaks, sear for about 2 minutes on each side. Top with the garlic butter mixture and place in the oven for 3 - 5 minutes for medium-rare. If you're not using an ovenproof skillet, place the steaks in an ovenproof dish or pan. Let rest before serving, enjoy, how could you not!!!!
