Strawberry Crisp

Easy, rustic, and absolutely delicious! Red ripe berries are simply stirred with sugar, flour and vanilla, then baked with a sweet crispy topping of oats, brown sugar, butter and almonds! Sounds good right? Bake them in individual ramekins, dessert seems so much more special when it's your very own! Always better with vanilla ice cream!

Serves: 4
Ingredients
Berries
  • 4 cups of ripe berries, washed and hulled
  • ½ cup of sugar
  • ⅓ cup of flour
  • 1 /2 tsp of vanilla
  • dash of salt
Topping
  • ½ cup of flour
  • ½ cup of oats
  • ¼ cup of brown sugar
  • ½ tsp of cinnamon - optional
  • ¼ cup of cold butter cut into small pieces
  • 3 Tbs of chopped almonds
Instructions
  1. Start by buttering 4 (8oz) ramekins, then chop the berries and add them to a large bowl with the sugar, flour, vanilla and salt. Stir until well combined.
  2. In another medium bowl, combine the flour, oats, brown sugar, and cinnamon. Then add in the butter and using your fingers, rub until the mixture becomes crumbly and the butter is in pea-size pieces. Preheat the oven to 350 degrees.
  3. Now to assemble, divide the berries evenly into the buttered ramekins and spoon the topping on.
  4. Place the ramekins on a baking sheet to catch any drippings, they will bubble over. Bake for about 40 minutes until bubbly and lightly browned, if you'd like the more color, pop under the broiler for 1 - 2 minutes. Let cool a little before serving, delish with vanilla ice cream, enjoy!
