Sweet and spicy grilled shrimp skewers

We adore shrimp of any kind but these are very special! You can use an indoor grill for your stove top if it's too cold outside, we use our fireplace grill in winter and it's perfect for these shrimp. The sauce is really the star of this show, it's sweet, savory and luscious! The good news is it's really quick and easy! Just simmer the sauce, skewer the shrimp, green pepper and pineapple, grill for a few minutes and dinner is ready! I serve this with long grain wild rice and a simple salad. Perfect for entertaining!

Ingredients
- ¾ cup of ketchup
- 4 Tbs of sugar
- 4 Tbs of white wine vinegar
- 4 Tbs soy sauce
- ½ tsp of red pepper flakes
- 5 - 6 garlic cloves, minced
- 1 Tbs of minced ginger
- 1 -1/2 lbs of large, raw shrimp, peeled and deveined
- 2 green peppers, cut into 1" pieces
- 1 can of pineapple chunks, drained
Instructions
- In a saucepan, over medium/high heat, add the oil, then saute the garlic and ginger, add in the ketchup, sugar, vinegar, soy, and red pepper flakes. Stir and cook for a few minutes until thickened.
- Now, using 5 metal or wooden skewers, skewer the shrimp, pineapple and green pepper. If you use wooden skewers, soak them in water for 30 minutes so they won't burn.
- Heat the grill pan, or get your bbq grill prepped, coat the grill with a little oil and grill the shrimp for 2 minutes on each side, brushing with the sauce. Serve the remaining sauce on the side.YUM!
