Glazed Mini Peach Pies

These little pies are seriously good and who doesn't like to pick up pie with their hands! Fresh peaches are perfectly spiced, tucked into a flaky pie crust, baked until golden, then glazed! Everyone raves over these little peachy pies! Use store bought crust and they are a snap to make! The filling also makes a delicious topping for waffles, ice cream, biscuits & toast!

Ingredients
Filling
- 3 peaches, peeled and diced
- ¼ cup of granulated sugar
- ¼ cup of brown sugar
- ½ tsp of salt
- 2 Tbs of cornstarch
- 1 tsp of lemon juice
- 1 tsp of cinnamon
- ⅛ tsp of nutmeg
- ⅛ tsp of cloves
- splash of vanilla
Crust
- 2 store bought, rolled pie crusts
- 1 egg white, beaten with a fork
Glaze
- 2 cups of powdered sugar
- 2 Tbs of milk, or enough to make a thin glaze
Instructions
- Start with your filling, add all ingedients to a medium saucepan over medium heat, bring just to a boil, lower the heat and simmer for 3 minutes until it starts to thicken.
- On a floured surface, roll out the pie dough large enough to cut out three, 5" rounds. Each sheet of pie dough will make 3 rounds, so you'll have 6 total. Place them on a parchment lined baking sheet, spoon about 2 Tbs of fillling on each round.
- Fold it over and crimp the edges with a fork. Brush on the egg white and bake for 15 minutes, until lightly browned.
- While the pies are baking, whisk the powdered sugar and milk until creamy.
- Let the pies cool for 10 minutes, then spoon on the glaze and let cool for another 20 minutes before serving!
